pea shoots

I thinned my peas this afternoon, which I never do as brutally as the seed-packet advises. Now, eating the thinned shoots, I regret my soft-heartedness. So tasty, so few.

Each time I cook pea shoots I tweak the recipe (such as it is) a little. This time was unusually good. So I approve of:
- high heat.
- add the pepper as you heat the butter.
- stir the peas briefly, then let them sit for their half minute: unearthly seared bits on the bottom!
