day of underground vegetables

Today I was pulling up some kale in excess of requirements, and other plants that had gotten into the bed, and up with one of the plants came OMG a fine large parsnip. I've never seen such a successful root vegetable.

I also dug into the potato pile, which I'd been guiltily eyeing since I ignored the potatoes and they shriveled up a month ago. I expected to find the potatoes shriveled too, but they're just fine. Though the jellybean-sized ones outnumber the malt balls, which outnumber the Cadbury Creme Eggs.
