I just ate a fish that has only 45 Google hits

and all but five are typos and other irrelevant stuff. The fish is "escalor". What the heck did we eat? Central Market must have misspelled it, or it's a new brand name for a reconstituted herring head product.

I don't know, but it's pretty tasty. Google hit #5 suggested it was like halibut, so I did a halibut recipe, baked with a gloop of sour-cream/onion/sage puree and a spot of cracker crumbs, but actually it's much richer than flatfish, more like black cod. Skip the sour cream.
