When your cilantro bolts too early, as it

do, sniggering visibly -- eat the flowers. They taste not very much like cilantro, but aromatic, and also sweet.

Just did that with the basil flowers (I just transplanted the damned plants last week!)
Cilantro tastes awful to me, but coriander is fine; I wonder where the flowers are in that continuum.
